Alot of people have turkey for their Christmas dinner.  I found some great recipes for the extra meat.

1.  Turkey and corn enchiladas- Combine 2 cups shredded roast turkey, 1 cup corn, 1 cup Mexican cheese.  Season with salt/pepper.  Roll into a small flour tortilla( try the whole wheat variety.  They really taste good).  Top with an enchilada sauce, and sprinkle a bit more cheese on top.  Bake at 400 degrees for 15-20 minutes.

2.  Turkey and Gorgonzola salad-  Take Boston lettuce or whatever your preference of lettuce is.  Use a few slices of red onion, 1/4 cup sliced toasted almonds.  Top with 3 oz. of sliced turkey, and 2 oz Gorgonzola cheese or fat-free feta.  Drizzle with your favorite vinaigrette or balsamic vinegar and a drizzle of extra virgin olive oil ( EVOO).

3.  Turkey reubens-  Put Dijon mustard on 2 slices of rye bread.  Put 3 oz turkey on top, 1/2 inch of sauerkraut, a slice of low-fat swiss.  You can put 1 tbls. of olive oil, or I spray bread with butter flavored Pam.

4.  Turkey Waldorf salad-  (Makes 4) Take 1 cup shredded roasted turkey, 1 cut up apple, 2 tbls roasted chopped pecans or walnuts, 2 tbls vanilla yogurt, or plain greek yogurt, and 1 tbls white wine vinegar.  Season with salt/pepper to taste.  Serve over red-leaf lettuce.

Dinner-  Party

6 oz Stripe bass ( 350 cal)

1/2 cup homemade slaw( 70 cal)

3 wine (300 cal) 

TOTAL CALORIES: 1366
