Last night I was weighed in and lost only .2 pounds.  I mean seriously?!  My consultant again seemed annoyed that I wanted to hit an actual number.  To me, after working this hard it's very important that I do.  Why can't she seem to understand this has been what helped motivated me to get to the end?  If I gain after reaching my goal a pound or two to where I am now, fine, but come on...let me reach my goal!  I even went running and an intense hike this past week.  Who knows, maybe it was muscle mass since those were two intense workouts coupled with my regular walks?.  Regardless, I'm still going to change a few things up this week...I am making my own breakfasts mostly.  So, I decided to make that Pumpkin Oatmeal this morning.  DELICIOUS!  I sprinkled Truvia on top and it was very filling.  My husband grumbled about it; lol, apparently it was too healthy for him.  I used whole grain oats, fat-free milk, raisins, cinnamon, pumpkin spice, and the Truvia.  He had to add brown sugar.  If you're on a diet, I do not recommend this.  He does not like oatmeal nor pumpkin in anything but pumpkin pie (who doesn't love fall foods with pumpkin or cinnamon added?!) so he wasn't a very good judge of character for this meal.  It has low calories and fat AND high fiber.  Heck yes I will be eating this again.  It made four servings (1 cup for each breakfast).  Honestly, my husband thought, "She's making breakfast?  I'll take it even if I don't like what it consists of."  LOL, but if you like pumpkin you will LOVE this recipe.  Look at my 10/6/11 blog for it. 

Breakfast -

1 cup Pumpkin Oatmeal


1 cup fat-free organic milk

1 cup coffee with 2 tsp. fat-free creamer

Snack -

JC Anytime Bar

Lunch -

JC Personal Pizza

Carrots and cauliflower

Snack -


Dinner -

JC Beef Chili with Beans

Salad (mixed greens, peppers, mushrooms) 2 tbsp. light southwestern ranch

Snack -

JC White Cheddar Popcorn
